Tart, tasty rhubarb

Rhubarb Compote


4 cups thinly sliced rhubarb
1/2 cup sugar
1/2 teaspoon minced ginger


Place all of the ingredients in a medium saucepan.  

Cook on medium heat until the rhubarb softens completely, about 5 to 10 minutes. 

Serve on pancakes or toast.
